MONDAY

Ingredients
MEATLOAF:
- 2.25 pounds ground beef not lean
- 1 cup grated onion
- 1 ½ cups crushed Ritz crackers
- 2 eggs whisked
- 2 tablespoons minced garlic
- ½ cup ketchup
- 1 tablespoon stone ground mustard
- 1 tablespoon Worcestershire sauce
- 1 bouillon cube crumbled
GLAZE:
- ¼ cup ketchup
- ¼ cup barbecue sauce
- 1 tablespoon Worcestershire sauce
Instructions
- In a large bowl combine onion, crackers, eggs, garlic, ketchup, mustard, worcestershire sauce, and bouillon. Mix well.
- Add ground beef and knead together until fully incorporated. If mixture is too wet, knead in additional crushed crackers.
- Press into a 10x5 loaf pan and cover with foil. Bake at 350 degrees for 60 minutes.
- While meatloaf is baking, whisk together ingredients for glaze.
- After 60 minutes, uncover and drain off any pooling liquid. Baste top with glaze. Return to oven uncovered for an additional 15 minutes, until the center of your loaf reaches 160 degrees.
TUESDAY
Ingredients
- 1 strip thick cut bacon
- 1 clove garlic minced (I used fresh)
- 2 -3 tablespoons minced red onion
- mushrooms 8 ounces (I used baby portabellas, but you can use whatever you like!)
- seasoned salt to taste (I use Lawry’s or Aunt Cora’s)
- 1/4 cup heavy cream
- optional: chicken stock or broth
Instructions
- Cook bacon in a frying pan on medium heat until almost crispy. Add garlic and red onion to pan and cook in bacon grease for 3-5 minutes, stirring frequently.
- Add mushrooms and cook until softened. Sprinkle with seasoned salt, to taste.
- Pour in cream and stir until well mixed and heated through. If you want the sauce a bit thinner, add chicken stock until you reach desired consistency.
- Pour over your favorite pasta (or zucchini noodles or spaghetti squash) and enjoy!
WEDNESDAY
Ingredients
- Par-baked pizza dough or flat bread I grabbed mine from an endcap at the market
- Alfredo sauce a jar from the spaghetti aisle!
- Mozzarella cheese shredded
Instructions
- On a parchment lined baking sheet (you don’t have to use parchment, but it does make for much easier clean-up), layer flatbreads, alfredo sauce, and mozzarella cheese.
- Bake at 350 degrees on the center oven rack for 12 to 15 minutes, until everything is heated through and cheese is melted and bubbling.
- If you’re a stickler for browning cheese like I am, you can turn the broiler on for 1 to 2 minutes at the end - but watch it closely!
THURSDAY
Ingredients
- 2 tablespoons sesame oil, divided into 1 TBS each (can substitute olive oil or vegetable oil)
- 1 onion diced
- 2 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 2 carrots about 1 cup, cut into matchsticks/julienned
- 2 celery stalks about 1 cup, diced
- 1 cup mushrooms cleaned and sliced
- 1 cup stock or broth chicken or vegetable
- ¼ cup soy sauce low sodium
- ¼ cup oyster sauce (can substitute hoisin, additional soy sauce, or Worcestershire sauce)
- ½ pound dried chow mein noodles (also called Chinese egg noodles) cook to al dente (8 ounces dry) - (can substitute ramen noodles in a pinch)
- ½ cup snow peas fresh
- ½ cup purple cabbage sliced
- ¼ cup cilantro chopped
- ¼ cup scallions or green onions garnish
Instructions
- In a large pan over medium high heat, heat 1 tablespoon of sesame oil. Add al dente noodles and fry in pan, stirring constantly, until turning brown and slightly crispy, about 3-4 minutes. Set noodles aside.
- Heat remaining sesame oil in pan and cook onion, carrots, and celery until almost tender, about 3-4 minutes.
- Add in mushrooms and cook for an additional minute. Stir in garlic and ginger and cook for 30 seconds.
- Pour in stock, soy sauce, and oyster sauce. Let simmer for 10 minutes until reduced by ⅓
- Stir in pasta, snow peas, and cabbage and cook for an additional 2 - 3 minutes until the noodles are warmed through and coated in sauce.
- Immediately before serving, toss in cilantro until just combined, and garnish with chopped scallions.
FRIDAY
Apple Cider Cupcakes with Salted Caramel Frosting
Ingredients
Cupcakes:
- one box vanilla cake mix
- ingredients to prepare boxed cake mix
- 5 packets spiced apple cider drink mix
Icing:
- 1 and ½ cups caramel candy cubes
- 1 container vanilla icing
- ½ to 1 teaspoon salt taste as you go
- powdered sugar as needed
Instructions
Cupcakes:
- Add apple cider drink mix to box cake mix and prepare cupcakes per package directions.
- Allow to cool completely before icing.
Icing:
- Melt caramel candies in the microwave (cook in 20 second increments and stir between, until melted through), it should yield approximately 1 cup when melted.
- In a bowl, combine vanilla icing and melted caramel. Add salt. Mix thoroughly and refrigerate for at least 10 - 15 minutes, until icing is cool enough to hold its form.
- If icing is still too runny, add powdered sugar in small increments until desired consistency is reached.
- Frost cupcakes and enjoy!
