ORLANDO, Fla. – A Michelin-Star chef’s handroll sushi bar concept is opening a second location in Orlando in the spring.
Sushi Saint, a fine-dining bar and lounge serving handroll sushi and omakase, will plant its second location in the entertainment district’s ICON Park, according to a news release.

The 3,000-square-foot restaurant is expected to open in the spring, with seating for 150 and creation of 30 jobs, the release states.
Its current location on 400 Pittman Street offers three unique experiences: A temaki bar where guests can indulge in handrolls prepared by chefs in front of them, a lounge with the full sushi menu, and omakase, a dining experience offering 12 courses curated by the chef serving up to nine seats, according to its website.
Skilled chefs from the restaurant offer cone-shaped temaki, small plates such as Sichuan cucumbers with chili crunch, avocado with serrano lime miso, aburi-style scallop with brown butter and shredded snow crab with truffle, all made with high-quality ingredients and toppings, the Michelin Guide wrote.

The new Sushi Saint at ICON Park will offer many of the same dishes and cocktails, including the temaki bar where chefs craft handrolls right in front of guests. However, the menu will also feature dishes exclusive to the new restaurant, according to the entertainment park.
The restaurant is run by chef Michael Collantes, who earned his first Michelin Star in 2022, a year after launching Soseki Modern Omakase in Orlando, the release said. Collantes’ portfolio spans multiple restaurants and bars in Orlando, as well as another Sushi Saint location in New York.
Sushi Saint joins a lineup of more than 20 restaurants and bars at ICON Park as the foodie scene in Orlando continues to grow.
The temaki bar earned a spot on the Michelin Guide’s recommended list in February 2024 and was honored as a Bib Gourmand recipient in April 2024, according to the Michelin Guide.
Sushi Saint is currently open seven days a week, taking reservations and private events.
